Making Perogies

Last week our family made the trip north to Akron, Ohio where Jeff is from originally. We spent the week at his dad's house and had a wonderful time with family over the Thanksgiving holiday. While we were there, we got together with Jeff's brother and sister (Joe and Joan) and made perogies together. We made two batches which came out to be about 12 1/2 dozen. We spit them with Joan and brought home around 6 dozen plus. Have you ever ate perioges? I had never heard of them till I met Jeff. It is a polish dish. The filling is made from mashed potatoes with cheese and onion mixed in, and the outer part is dough. We fry them in onion and butter and Oh man are they good!! You can buy them at the grocery store in the freezer section. But it is really nice having our own "made from scratch". They are not hard to make, just a little time consuming. However, having our family do it together made it go very quickly and it is lots of fun. When we used to live in Ohio, we got together with Jeff's family several times and made these. We have missed that and were thrilled that they wanted to do it while we were there this year. Below are some pictures we took of the process.

Jeff mixing up the dough

Joan is consulting the recipe just to make sure...though she knows what she is doing and does a wonderful job making these!

Here is Lisa, Joe, Timmy (Joan's oldest son) and Joan all working together
to keep things "rolling" smoothly. Timmy got right in there and helped us. He enjoys cooking and does a great job. (He is 17)

Lisa and Timmy had the fun job of rolling out the dough and
cutting the perogies out.

Now it is Jeff' and Joan's turn. See the fancy "perogie cutter"
we used? Ha! Hey, it worked great!

Here are the perioges boiling. That is first step in cooking them when
you make them homemade.

The final product! (before cooking them with the onion).
We can freeze them like this.

I have the recipe if any of you are interested in trying it sometime. If you don't want
to go to all that trouble (though it makes for great family fellowship)
try the store bought kind. They are really good too.

We have a tradition here in our home in which we eat for dinner what I ate the night before I had the boys, on the eve of their birthday. So, on Jan 16, for the last 11 years, we have had perogies and we LOVE them!!!!

This sounds like a fantastic tradition! :) Glad you were able to make it to Ohio to visit the family. I am not sure when we will make it home next. I think I will take you up on your offer for the recipe. :)
